  • 4 large cucumbers
  • 3 medium onions
  • 3 medium potatoes
  • 1 plain yoghurt
  • 1 litre chicken stock
  • Peel and deseed the cucumber (if seeded)
  • Bring 1 litre of chicken stock to the boil
  • Add potatoes, onion, and cucumber to the stock and cook until they are tender
  • Remove the mixture from the heat and blend it to a smooth consistency
  • Allow the soup to cool, then serve it in bowls
  • Before serving, add a dollop of plain yoghurt on top
