  • 225 grams white fish fillet; skinned and boned
  • 1 avocado peeled, stoned and sliced
  • 150 grams prawns peeled
  • 150 ml double cream
  • 150 grams cheddar
  • olive oil
  • salt
  • black pepper freshly ground
  • 1 handful basil optional
  • Pre-heat the oven to 220°C
  • Grease a baking dish or roasting tray with olive oil
  • Season the fish on both sides and place it in the dish
  • Add basil, avocado, and shrimps
  • Drizzle the cream and grated cheese over the ingredients
  • Cook for 15 – 20 minutes until the fish is cooked and the sauce is golden brown and bubbling
