Instructions
Pre-heat the oven to 175°C (350F)
Sauté the onion and butter in a 10-inch oven-proof omelette/frying pan over medium/low heat until they become translucent, which takes about 5 minutes
Beat the eggs in a large bowl
Combine the beaten eggs with the double cream, crumbled goats' cheese, chopped smoked salmon, chopped spring onions, chopped dill, salt, and pepper
Pour the mixture over the sautéed onions in the omelette pan
