Ingredients

  • 1 medium onion diced
  • 1 tbsp butter unsalted
  • 12 large eggs
  • 240 ml double cream
  • 112 grams goats cheese; such as Montrachet crumbled
  • 225 grams smoked salmon chopped
  • 3 spring onions chopped; white and green parts
  • 3 tbsp dill fresh; chopped
  • 1 tsp salt
  • ½ tsp black pepper freshly ground

Instructions

  • Pre-heat the oven to 175°C (350F)
  • Sauté the onion and butter in a 10-inch oven-proof omelette/frying pan over medium/low heat until they become translucent, which takes about 5 minutes
  • Beat the eggs in a large bowl
  • Combine the beaten eggs with the double cream, crumbled goats' cheese, chopped smoked salmon, chopped spring onions, chopped dill, salt, and pepper
  • Pour the mixture over the sautéed onions in the omelette pan
  • Place the omelette pan in the centre of the oven
  • Bake the frittata for approximately 25 minutes until it puffs up and a knife inserted in the middle comes out clean
  • Serve the frittata hot directly from the pan
