Ingredients

  • 225 grams boneless saltfish
  • 1 small onion finely chopped
  • 27 grams spring onion chopped
  • 3 cloves garlic finely chopped
  • 1 tbsp pepper sauce optional
  • 170 grams flour
  • 2 tsp baking powder
  • 1 egg
  • 28 grams butter
  • 120 ml milk
  • 120 ml water
  • salt to taste
  • pepper to taste

Instructions

  • Place the saltfish in 1.5 litres of water and bring it to a boil, then allow it to boil for a few minutes
  • Drain the water and transfer the saltfish to a pan with 1 litre of fresh water, then boil it for 30 minutes
  • Shred the saltfish
  • Add all the ingredients to a mixing bowl and vigorously stir until a thick batter is formed
  • Heat oil in a deep fryer over medium heat and fry the mixture until it turns golden brown
  • Serve the saltfish cakes with a dip of your choice
