Ingredients

  • 3 eggs
  • 125 ml full-fat milk
  • 2 spring onions finely sliced
  • 2 tbsp olive oil
  • 60 grams mashed potato granules
  • 40 grams flour
  • 1/2 tsp baking powder
  • 1/2 tsp lemon juice or lime
  • cream cheese and smoked salmon topping
  • dill garnish

Instructions

  • Whisk together the eggs, milk, spring onions, and olive oil
  • Stir in the potato granules, flour, baking powder, and then add the lemon or lime juice
  • Heat a hot griddle or a heavy-base frying pan and drop tablespoonfuls of the mixture into the pan
  • Cook the pancakes for about 30 seconds until they turn golden, then flip them and cook the other side
  • Allow the pancakes to cool
  • Meanwhile, soften some cream cheese with milk and slice the smoked salmon into small pieces
  • Top the pancakes with the cream cheese and place small slices of smoked salmon on each pancake
  • Decorate the pancakes with a sprig of dill
