Ingredients

  • 500 grams beef
  • 500 grams pork
  • 500 grams oxtail
  • 225 grams salt meat
  • 500 grams chicken parts or 1 small stewing chicken
  • 4 large onions
  • thyme
  • 2 hot peppers
  • cassareep

Instructions

  • Boil the oxtail and salt meat for approximately one hour
  • Then add the remaining meat and cook until it becomes tender
  • Remove from the heat and allow it to cool
  • Remove the meat from the bones and shred it
  • Add the liquid in which it was cooked, along with sliced onions, thyme, pepper, and cassareep
  • If necessary, add a little salt and sugar to taste, and more pepper if it's not hot enough
  • Bring to the boil and let it simmer until thick
  • It's worth noting that this dish freezes well
