Ingredients

  • 1 large onion sliced
  • 2 cloves garlic finely chopped
  • 4 tbsp olive oil
  • 400g tin chopped tomatoes
  • 285 ml white wine
  • 1 tsp oregano
  • salt
  • pepper
  • 2.25 litres mussels
  • 2 tbsp double cream
  • parsley chopped; to garnish
  • 2 tbsp Parmigiano Reggiano optional

Instructions

  • Sauté the onions and garlic in olive oil until softened
  • Add the chopped tomatoes, white wine, and seasoning
  • Allow the mixture to simmer for 10 minutes
  • Clean the mussels by scrubbing them and removing any beards. Discard any mussels that are already open and do not close when tapped
  • Add the mussels to the soup and steam them until they open. (Do not consume any mussels that remain closed.)
  • Stir in the double cream after a couple of minutes and add a little more wine if the soup is too thick
  • Garnish the soup with chopped parsley and serve it with crusty bread
