400gtinchopped tomatoes
285mlwhite wine
1tsporegano

2.25litresmussels
2tbspdouble cream
parsleychopped; to garnish

Instructions
Sauté the onions and garlic in olive oil until softened
Add the chopped tomatoes, white wine, and seasoning
Allow the mixture to simmer for 10 minutes
Clean the mussels by scrubbing them and removing any beards. Discard any mussels that are already open and do not close when tapped
Add the mussels to the soup and steam them until they open. (Do not consume any mussels that remain closed.)
Stir in the double cream after a couple of minutes and add a little more wine if the soup is too thick
Garnish the soup with chopped parsley and serve it with crusty bread
