Ingredients

  • 450 grams okra
  • 85 ml oil
  • 1 medium onion minced
  • 1 tbsp ground coriander
  • 1 tbsp garam masala powder
  • 1 tsp chilli powder
  • 1 tsp turmeric
  • 1 tsp salt
  • 1 tbsp tomato purée

Instructions

  • Dampen a cloth and wipe the okra
  • Create a slit on one side of each okra to form a pocket and keep them aside
  • In a bowl, mix 2 tbsp oil with the remaining ingredients until well combined
  • Use the mixture to stuff each okra, pressing it firmly into the pocket
  • Heat the remaining oil in a pan and carefully place the stuffed okra in the oil
  • Cook the okra uncovered over a medium heat for around 25 minutes, tossing them regularly to prevent sticking
  • Arrange the cooked okra in an appealing manner on a warm serving dish
  • Serve the dish with sliced banana
