Ingredients

  • 450 grams butter
  • 32 grams garlic minced
  • 128 grams mustard whole gran
  • 15 grams fresh thyme chopped
  • 2 lemons juiced
  • 2 tbsp Old Bay seasoning
  • 1 tsp salt
  • 2 tsp black pepper freshly ground
  • 360 grams panko breadcrumbs do not substitute regular breadcrumbs
  • 1 1.4 - 1.8kg side of salmon skin on, pin bones removed

Instructions

  • Whisk the butter with an electric mixer until it becomes light and fluffy
  • Add the minced garlic, whole grain mustard, chopped fresh thyme, lemon juice, Old Bay seasoning, salt, pepper, and panko breadcrumbs to the mixture and mix thoroughly
  • Line a small sheet pan with parchment paper or waxed paper and place the salmon, skin side down, on the pan
  • Blot the salmon with paper towels to remove any excess moisture
  • Spread the butter mixture onto the salmon, creating a ¼ inch crust while the butter is still soft
  • If desired, cover the salmon with plastic wrap and refrigerate once the butter has hardened
  • Preheat the oven to 220°C (425°F)
  • Bake the salmon for approximately 12 minutes, or until it is still slightly pink
  • Using two long flat spatulas, carefully lift the salmon off the paper and transfer it to a serving platter
  • This dish can also be prepared as individual portions if desired
